I made a Dublin Coddle last night...it was SO good. :)
Oh, I forgot about Coddle. Yes, so good! I did not make corned beef and cabbage, but I did make gluten free Irish soda bread and a County Clare Vegetable Soup (recipe from chef Mary Nolan at the Clare Inn). It made a nice supper.
I love corned beef. I made it myself this year. Started with beef and marinated it in the refrig for 6 days. Then cooked it in the crockpot. Very easy and a lot less fatty than what you buy in the store.
